The other day I had the most delightful little lunch: Cucumber “sandwiches”. Little bites using cucumber slices instead of bread, filled with deli meats, cheese, and various condiments.

Totally satisfying and fun to eat.
They’re also low-carb and paleo and Whole30 friendly (if you avoid the cheese).
Bite-Sized Is Better
I’ve seen recipes similar to this that use a whole cucumber sliced in half the long way. I don’t know about you, but that seems like a little too much cucumber to eat gracefully.
When you eat a cucumber, do you start eating on one end and finish at the other? I didn’t think so.
You don’t eat a cucumber whole – so why would you eat a cucumber sandwich whole? Slice it up!
School lunch: These make a great lunch or snack for kids. They will love mixing and matching toppings to make their own customized sandwiches.
Party food: Throwing a party? Assemble a “make-your-own cucumber sandwich bar”, where guest make their own bites.
Save money: Inventory your fridge and use up bits of leftover cheese, meat, mustard, etc. You may have all the ingredients you need on hand!

Breadless Cucumber Sandwiches

Ingredients:
- 1 large cucumber, cut into thin slices on the bias
- Your choice of condiment: Mayo, mustard, ranch dressing, hummus, etc.
- Your choice of deli meat: Ham, turkey, roast beef, salami, etc.
- Your choice of sliced cheese
- Grape tomatoes
- Gherkin pickles
Directions:
- Top each cucumber slice with your choice of sauce, meat, and cheese.
- Top with a grape tomato or gherkin, if desired, and secure with a toothpick.
